If you truly want experienced and wine savvy wait staff you will need to lure them from other locations with more than a more convenient location. You will need to offer excellent salaries and a contract. Too many places in this area start out with very
ambitious plans and do not follow thru, disappointing those who gave up other jobs to come work for them.

Manhattan is getting a THIRD new restaurant? W0W. Personally, I'd look at how long all the others lasted, and see how the current new ones do, before I'd invest in opening up anything else. Also, I dont think an upscale eatery will do well in this town. Out more towards Orland or Tinley is where the more e4xpensive, upscale, places seem to last longer.

What is the name of this restaurant? If you click the link it brings you to Gallaghers and Fritz's neither one is fine dining LOL.

If I were to open a restaurant in Manhattan, I'd use an electronic sign so I could change the name weekly
